Savory Delight: Mutton Rice Platter Recipe

For the Mutton Marinade:

  1. 500g of bone-in mutton pieces
  2. 1 cup of yogurt
  3. 1 tablespoon of ginger-garlic paste
  4. 1 teaspoon of red chili powder
  5. 1/2 teaspoon of turmeric powder
  6. 1 teaspoon of garam masala
  7. Salt to taste

For the Rice:

  1. 2 cups of Basmati rice
  2. 4 cups of water
  3. 2 tablespoons of ghee (clarified butter)
  4. 2-3 green cardamom pods
  5. 2-3 cloves
  6. 1-inch cinnamon stick
  7. Salt to taste

For the Mutton Curry:

  1. 2 tablespoons of vegetable oil
  2. 1 large onion, finely chopped
  3. 2 tomatoes, chopped
  4. 1 teaspoon of cumin seeds
  5. 1 bay leaf
  6. 1/2 teaspoon of red chili powder
  7. 1/2 teaspoon of turmeric powder
  8. 1 teaspoon of coriander powder
  9. Salt to taste
  10. Fresh coriander leaves for garnish


  1. Marinating the Mutton: a. In a bowl, combine the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. b. Add the mutton pieces to the marinade and mix well. Allow it to marinate for at least 2 hours, or overnight in the refrigerator for best results.
  2. Preparing the Rice: a. Wash the Basmati rice thoroughly and soak it in water for 30 minutes. b. In a large pot, heat ghee and add the whole spices – green cardamom pods, cloves, and cinnamon stick. Sauté for a minute. c. Drain the soaked rice and add it to the pot. Stir-fry the rice for 2-3 minutes. d. Add water and salt to the rice, bring it to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and each grain is separate. Set the rice aside.
  3. Cooking the Mutton Curry: a. Heat vegetable oil in a large, heavy-bottomed pan. b. Add cumin seeds and bay leaf, and let them splutter. c. Add the chopped onions and sauté until they turn golden brown. d. Stir in the chopped tomatoes and cook until they become soft and mushy. e. Add the marinated mutton pieces along with the marinade and cook on medium-high heat until the mutton changes color and the oil starts to separate. f. Add red chili powder, turmeric powder, coriander powder, and salt. Cook for a few more minutes until the mutton is well-coated with the spices. g. Add enough water to cover the mutton, reduce the heat to low, cover, and simmer for about 45 minutes to 1 hour or until the mutton is tender and fully cooked.
  4. Assembling the Mutton Rice Platter: a. In a serving platter, spread a layer of the cooked rice. b. Top the rice with the flavorful mutton curry. c. Garnish with fresh coriander leaves. d. Serve hot with raita or a side salad.
